No-Bake Summer Fruit Pie Recipe
When it's too hot outside to turn on the oven, this easy and sweet fruit pie recipe is perfect. Serve chilled and top with whipped cream, if desired. This recipe is both vegetarian and vegan.

Ingredients:

  • 1 1/2 tbsp corn starch
  • 1 20 ounce can crushed pineapple in juice
  • 3 fresh peaches, sliced, or 1 20 ounce can sliced peaches, drained
  • 1/2 cup fresh blueberries
  • 1 pint fresh strawberries, sliced
  • 1 pre-made pie crust

Preparation:

In a medium saucepan, combine the cornstarch with 3 tablespoons of the pineapple juice. Add the remaining juice and pineapple and cook over medium heat until thickened about 5 to 7 minutes. Set aside.

Arrange the peaches, blueberries and strawberries in the crust. Pour the thickened pineapple mixture over the fruit.

Refrigerate for 1 hour before serving.

Garnish with whipped cream if desired.
