Sugar-Free Vegan Peanut Butter, Oatmeal and Banana Cookies

Using flour with oatmeal and relying on a dash of maple syrup for sweetness, this sugar-free vegan cookie recipe is a healthy dessert that will be sure to please every health-conscious cookie lover! Along with being vegan, this cookie is also quite low in calories with less than 100 calories per cookie. They are delicious, though, so don't blame me if you eat more than one or two!

  • 1/3 cup peanut butter
  • 2 ripe bananas (overripe is fine)
  • 1 tsp vanilla
  • 2 tbsp soy milk
  • 2 tbsp maple syrup
  • 2 ½ cups quick cooking or rolled oatmeal
  • dash cinnamon (optional)
  • 1/4 cup flour


In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined.

Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.

Note: Watch out for added sugar! This recipe is only truly sugar-free if you used unsweetened peanut butter and unsweetened soymilk, so read the ingredients list and look for soy milk that says "Unsweetened" right on the label.

As a scientist I find the misunderstandings about sugars frustrating. This recipe is a good example. What exactly makes maple syrup sweet? The answer is mainly sucrose. What is sucrose? ""Regular"" sugar. The sugar you buy in the supermarket is close to pure sucrose. Maple syrup is close to 50% sucrose. Of course there is the other 50% and maple syrup has some high levels of minerals, antioxidants, etc. I like maple syrup, I eat maple syrup but I don't fool myself that it is sugar free.
