Gluten-Free Chocolate Chip Cookies

A simple gluten-free cookie recipe for gluten-free and wheat-free chocolate chip cookies. If you've got kids with food allergies, you can still enjoy these classic American cookies by using this recipe using rice bran, oats, and gluten-free flour. Recipe courtesy of Ener-G Foods.

Ingredients:

  • 1 cup margarine
  • 1 cup brown sugar
  • 3 egg whites
  • 1 tsp gluten-free vanilla
  • 1 cup gluten-free flour
  • 3/4 cup rice bran
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups quick cooking oats
  • 1 cup chopped pecans
  • 1 package chocolate chips

Preparation:

Beat margarine and sugar together until creamy. Beat in egg white and vanilla.

In separate bowl sift flour, rice bran, soda and salt. Add to creamed mixture. Beat well.

By hand stir in oats, nuts and chips.

Drop by rounded teaspoonful onto greased baking sheets.

Bake at 350 degrees F. for 8 to 10 minutes. Remove. Cool. Makes 3 dozen cookies.

This cookie recipe is gluten-free and wheat-free.
