Ingredients:
- 4 eggs
- 3/4 cup brown sugar
- 1 tsp gluten-free vanilla
- 2 tbsp vegetable oil
- 3/4 cup potato mix
- 1 1/4 tsp baking powder
Preparation:
Whip eggs until frothy. Mix in remaining ingredients. Scrape down bowl and mix another 20 seconds.
Pour into 9" diameter cake pan.
Bake 35 to 40 minutes.
