Citrus Honey Cake

Citrus Honey Cake - a very light and low-fat cake recipe. This easy orange and pineapple cake recipe is courtesy of Texas Sweet Citrus.

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 cup honey
  • 1 16 ounce can crushed pineapple, drained
  • 1/3 cup fresh squeezed orange juice
  • 1/3 cup fresh squeezed grapefruit juice
  • 2 tsp grated grapefruit peel
  • 3 eggs, beaten
  • 1 tsp vanilla
  • 1 tbsp vegetable oil
  • 2 cups powdered sugar
  • 1 tbsp butter
  • 1 tbsp fresh squeezed grapefruit juice

Preparation:

Combine flour, sugar and baking soda; mix well. Add honey, pineapple, orange juice, grapefruit juice and peel, eggs, vanilla and oil. Beat with mixer until smooth.

Pour into 2 greased 9-inch cake pans.

Bake at 350 degrees for 20-30 minutes.

In a small bowl, combine together the powdered sugar, butter and 1 tablespoon fresh grapefruit juice. After cake layers are cool, spread this powdered sugar filling mixture smoothly between layers. Garnish with grapefruit sections.
