Ingredients:
- 2 cups flour
- 1 cup sugar
- 1 tsp baking soda
- 1/2 cup honey
- 1 16 ounce can crushed pineapple, drained
- 1/3 cup fresh squeezed orange juice
- 1/3 cup fresh squeezed grapefruit juice
- 2 tsp grated grapefruit peel
- 3 eggs, beaten
- 1 tsp vanilla
- 1 tbsp vegetable oil
- 2 cups powdered sugar
- 1 tbsp butter
- 1 tbsp fresh squeezed grapefruit juice
Preparation:
Combine flour, sugar and baking soda; mix well. Add honey, pineapple, orange juice, grapefruit juice and peel, eggs, vanilla and oil. Beat with mixer until smooth.Pour into 2 greased 9-inch cake pans.
Bake at 350 degrees for 20-30 minutes.
In a small bowl, combine together the powdered sugar, butter and 1 tablespoon fresh grapefruit juice. After cake layers are cool, spread this powdered sugar filling mixture smoothly between layers. Garnish with grapefruit sections.
