Low-fat vegan raspberry chocolate chip brownies

Liz from Sugar Ridge Retreat in Canada shares this low-fat vegan brownie recipe, complete with raspberries and chocolate chips. A real treat! Using applesauce and a banana instead of oil keeps this vegan raspberry brownie recipe very low in fat, and, of course, it's also egg-free so it's cholesterol-free as well.

Ingredients:

  • 3/4 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 - 1 cup sugar
  • 3 tbsp cocoa
  • 1 very ripe banana, mashed
  • 1 heaping tbsp ground flax seeds (flax meal)
  • 1/4 cup water
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 3/4 cup vegan chocolate chips
  • 1/2 cup chopped walnuts
  • 1 cup raspberries, coarsely chopped

Preparation:

Preheat oven to 350 degrees and lightly grease an 8-inch square baking pan.

Combine whole wheat flour, baking powder, salt, sugar and cocoa in a large mixing bowl.

Mix ground flaxseeds with water in a small bowl and allow to stand for about five minutes, or until gooey.

Mash banana in a separate small mixing bowl. Combine applesauce, vanilla and flaxseed mixture with banana.

Combine wet banana ingredients with dry whole wheat flour ingredients and mix until combined.

Add in chocolate chips, walnuts and raspberries. Pour mixture into prepared baking pan.

Bake for 30 – 40 minutes or until done. Look for dryness of top of brownies and check to see if the brownies are slightly pulling away from sides of dish after 30 minutes. If not, leave in the oven for a few minutes more.

More tips from Liz to get the perfect oil-free vegan brownies:

  • Amount of sugar can be adjusted to taste. (Even less than ¾ c if desired.)
  • Don’t add full amount of applesauce all at once. Batter should be thick and wet, but not runny.
  • Add more applesauce if too dry.
  • Try dried cranberries instead of raspberries for a different flavor.
  • Recipe can easily be doubled… usually the preferred size once you taste them!
  • Try recipe in spring form pan and sprinkle top with icing sugar before serving.
