Sugar-free vegan strawberry popsicles are perfect for a cooling summer treat. Made with blended silken tofu and sweetened with brown rice syrup instead of sugar, homemade strawberry popsicles are a great low-fat and sugar-free treat.

Ingredients:
- 12 ounces of silken tofu, gently patted dry
- 1/4 cup cocoa
- 1/2 cup brown rice syrup
- 1 teaspoon vanilla
- 1 tablespoon light olive oil
- dash sea salt or kosher salt
- 4 strawberries, diced small
Preparation:
Combine tofu, cocoa, brown rice syrup, vanilla, olive oil and salt in a blender or food processor, and process until smooth and creamy. Gently fold in the strawberries by hand.
Pour the mixture into prepared popsicle molds or small paper cups, and freeze for at least three hours, or until firm.
If using paper cups, freeze for 20-30 minutes until slightly firm, then add popsicle sticks.
Makes about 8 popsicles.
