Chilled Mango Chipotle Soup

In Mexico, the traditional way of eating mangoes is by sprinkling them with a bit of salt and lime. This chilled soup takes those flavors and turns it into a cold fruit soup, perfect for a hot summer day. This cold soup recipe is both vegetarian and vegan.

Ingredients:

  • 2 mangoes
  • juice from 1 lime
  • 1/2 tsp ginger powder
  • dash salt and pepper, to taste
  • 1 tsp chipotle powder
  • 2 cups water or vegetable broth

Preparation:

Puree all ingredients together in a blender or food processor until smooth and creamy. Add more spices to taste, and serve cold.
