Cold Tomato Basil Soup Recipe

Low-cal, low-fat easy tomato soup!

Tomato basil soup is similar to a gazpacho soup, but with little extra flavoring, the natural sweetness of the tomatoes really shines through. This cold tomato soup recipe low calorie, low-fat, vegetarian and vegan.

Ingredients:

  • 2 pounds tomatoes
  • 1 bunch fresh basil, chopped
  • 2 cups vegetable broth
  • 2 cloves garlic
  • 2 tsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper to taste

Preparation:

Place all ingredients in a food processor or blender and process until almost smooth, or until desired consistency is reached.

Transfer to a large saucepan and simmer over low heat for 10 minutes.

This quick and easy tomato soup is delicious hot or cold. Makes four servings of tomato and basil soup.

Try it Roasted, Guest

This has become my new go-to roasted garlic and tomato soup. It is surprisingly simple, and tastes wonderful. Of course, I made some modifications (don't we all?). So, I roasted the following at 325: a head of garlic, all tomatoes until they had a bit of char on them, an onion, and a few stalks of celery and carrots, just because there was room in the roasting pan. Just to char a bit further, when all of the vegetables were cooked, I broiled them for about 10 minutes. I threw all the vegetables in the blender, poured this into the vegetable stock, and added half of a can of tomato paste for colour. I did NOT add the basil until immediately before serving, as blending basil can cause the soup to be visually unappealing. As a huge Vegeta fan, I sprinkled a bit on the soup just before the basil was added. We grated some romano or parmesan (can't remember which) into the soup at the table, and it was devoured. This recipe is easy, delicious, and nutritious - a definite keeper!
