An incredibly easy way to make homemade vegan cereal bars or breakfast bars, this one using corn syrup and cornflake cereal.
Ingredients:
- 1 cup light corn syrup
- 1 cup sugar
- 1 1/2 cups peanut butter
- 6 cups corn flakes
- 1 cup vegan chocolate chips
Preparation:
Lightly grease an 8 x 10-inch cake pan
Stir together the light corn syrup and sugar in a medium pot over low heat. Bring to a simmer, then remove from heat and stir in the peanut butter, combining until smooth and creamy.
Add cornflakes, then transfer to lightly greased cake pan.
Carefully heat the chocolate chips over very low heat, stirring until melted; or, use a double boiler to melt, then drizzle chocolate over cornflake mixture in the pan.
Chill until firm, at least 3 hours, then slice into bars or squares.
