Whole Wheat Pastry Crust, Pie Crust or Quiche Crust

A whole wheat pastry crust recipe for making homemade vegetarian quiche. This whole wheat crust could also be used for a pie crust as well as a quiche crust. Although this recipe calls for milk, you could use soy milk for a vegan pastry crust.

Ingredients:

  • 1 cup whole wheat pastry flour
  • 1 tsp sugar
  • 3/4 tsp salt
  • 4 tbsp vegetable oil
  • 2 tbsp milk

Preparation:

Preheat oven to 400 degrees.

Into 8 or 9-inch quiche plate or pie plate, stir together flour, sugar and salt. With fork, whip together oil and milk; pour over flour mixture. Mix with fork till all flour is dampened. Press dough evenly against bottom and sides of plate. Crimp edges.

Line the unpricked pastry shell with a double thickness of foil. Bake in oven for 8 minutes.

Remove foil. Bake for 4 to 5 minutes more or till pastry is set and dry. Remove from oven.

Great BUT double the oil and milk!, Guest Amerasian Mama

We love this recipe and have been using it over and over again, however, I double the milk and oil that the recipe calls for and I don't know how the recipe can work without this addition/change. We are loyal to this recipe but have our own fattier version, I guess. Love the results!
