An easy recipe for vegan French toast. I love spicing up my French toast a bit - nutmeg, cloves, pumpkin pie spice and of course, cinnamon! It's all good! This easy vegan French toast recipe is flavored with both nutmeg and pumpkin pie spice and a bit of maple syrup for a fantastic egg-free and dairy-free vegan breakfast. Add a side of sliced fresh fruit and you've got yourself a fantastic vegan breakfast or weekend brunch.

Ingredients:
- 1 cup soy milk
- 2 tbsp flour
- 1 tbsp nutritional yeast
- 1 tsp sugar or maple syrup
- 1 tsp vanilla
- 1/3 tsp nutmeg
- 1/4 tsp pumpkin pie spice (optional)
- bread - a touch stale or day-old is best, and thickly sliced
- oil or margarine for frying
Preparation:
Whisk together all the ingredients except the bread and oil, and pour into a shallow dish or pie tin. There's a reason that most French toast recipes use day-old bread. Besides being a great way to use up bread that's no longer soft, a drier bread will absorb more of the liquid ingredients and spices, and therefore be more flavorful!
Another reason? Fresher bread is likelier to get soggy, rather than crispy on the outside when heated on the griddle.
Don't pre-dip! Your bread will also get soggy if you leave it in the mixture too long. Just work one side at a time.
Dip each slice of bread into the mixture, coating each side well. Fry on a lightly oiled griddle or skillet until each side is golden brown.
