Orange Banana Breakfast Couscous

Couscous makes an easy healthy breakfast

Couscous makes a quick and easy vegetarian or vegan breakfast alternative to processed cereal or if you're bored of oatmeal. Try this filling and satisfying orange and banana couscous for breakfast.

Ingredients:

  • 1 cup water
  • 1 cup orange juice
  • 1 cup couscous
  • 1 banana, sliced
  • cinnamon and nutmeg, to taste
  • maple syrup, to taste

Preparation:

Heat water and orange juice until almost boiling in a small saucepan. Add couscous, cover, and turn off heat.

Allow to sit for 5-10 minutes, until couscous is soft.

Add in sliced banana, and sprinkle with a bit of cinnamon and nutmeg, and drizzle with just a touch of maple syrup.
