Gluten-Free, Sugar-Free Brown Rice Flour Muffins recipe courtesy of Ener-G Foods. These gluten-free muffins use Splenda instead of sugar for a bit of sweetness, so they are sugar-free as well as gluten-free. This is a basic recipe, so feel free to spruce it up a bit by adding some extra toppings, such as poppy seeds, blueberries or some dried fruits and nuts. Ingredients:

  • 2 cups brown rice flour
  • 2 tsp baking powder
  • 4 tbsp Splenda
  • 1 egg, beaten
  • 1 tbsp oil
  • 1 cup milk

Preparation:

Preheat oven to 350 degrees F.

Beat egg. Add milk and oil. Mix together well. Add remaining ingredients and mix about 1 mix for one minute.

Fill lightly oiled muffin tins 3/4 full. Place in oven for 25 to 28 minutes.

This muffin recipe is sugar-free, gluten-free and yeast-free.

This worked out pretty well. I copied Healthycookie somewhat. I wasn't sure if they left the recipe how it was, and just added those items, of if they actually substituted the applesauce for oil, and honey for sugar though. That's what I actually did, and it still turned out good! Wasn't incredibly sweet, but I actually like it that way. I also didn't add the bk soda like they did. Just added 1 extra egg, 1/2 c. applesauce, 1/4 c. honey, and 2/3 c. milk. My first try with wheat free cooking.. Not bad!
