Breakfast Home Fries

Classic all-American diner-style vegetarian and vegan breakfast home fries! Who doesn't like a greasy, filling potato fry-up for breakfast, whether you're vegetarian or vegan or not? Potato home fries, like hash browns, are a wonderful cure for a hangover!

Ingredients:

  • 3 large potatoes, chopped into 1/2 inch squares
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1/4 tsp paprika
  • 2 green onions, diced
  • salt and pepper to taste
