Healthier Vegan Chocolate Chip Scones Recipe

Looking for a healthy scone recipe or just a vegan dairy-free and egg-free scone recipe? This recipe for vegan scones with chocolate chips is much healthier than other scone recipes, as it has less sugar and fat than other scones. It's not exactly healthy, but it is healthier than other scone recipes, at least! Scroll down for more scone recipes and vegan scone recipes to try.

Ingredients:

  • 2 cups flour
  • 3 tbsp sugar
  • 1/2 cup margarine
  • 1/2 cup soy milk
  • 1/4 cup silken (soft) tofu
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

Preparation:

Pre-heat oven to 425 degrees and lightly grease a baking sheet.

In a large bowl, mix together the flour and sugar. Cut in the margarine, mixing only until the mixture becomes crumbly.

In a separate bowl, mix together the soy milk, tofu and vanilla, then add to the dry ingredients. Add chocolate chips, and gently mix until a dough is formed.

On a floured surface, gently knead the dough a few times, then roll into a circle. Cut into wedges, like a pizza and place dough wedges on baking sheet.

Bake for 18 to 20 minutes, or until lightly golden.
