Ingredients:
- 2 cups flour
- 3 tbsp sugar
- 1/2 cup margarine
- 1/2 cup soy milk
- 1/4 cup silken (soft) tofu
- 1 tsp vanilla
- 1/2 cup chocolate chips
Preparation:
Pre-heat oven to 425 degrees and lightly grease a baking sheet.In a large bowl, mix together the flour and sugar. Cut in the margarine, mixing only until the mixture becomes crumbly.
In a separate bowl, mix together the soy milk, tofu and vanilla, then add to the dry ingredients. Add chocolate chips, and gently mix until a dough is formed.
On a floured surface, gently knead the dough a few times, then roll into a circle. Cut into wedges, like a pizza and place dough wedges on baking sheet.
Bake for 18 to 20 minutes, or until lightly golden.
