Ingredients:
- 3 eggs
- 1 tbsp minced fresh parsley
- 1 tbsp minced fresh basil
- 1 tsp chives, minced
- 1/2 tsp tarragon
- salt and pepper to taste
- 2 tsp butter
Preparation:
Whisk together all ingredients, except butter.In a large skillet or frying pan, melt the butter and swirl the pan so the butter coats the entire bottom of the pan. Pour half of the eggs mixture into the pan and cook just until done, folding in half. Repeat with other half. Yields two omelettes.
