Vegan Eggnog Pancakes

Vegan pancakes made with vegan eggnog are the perfect Christmas breakfast food for vegetarians or vegans. Make your own homemade vegan eggnog or use a store-bought brand. Egg nog pancakes are the perfect Christmas or holiday breakfast treat for your vegan family or vegan kids.

Ingredients:

  • 1 1/2 cups flour
  • 1 tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup vegan eggnog (see note below)
  • 2 tbsp vegan margarine, melted
  • Ener-G Egg Replacer for 1 egg
  • oil or margarine for cooking

Preparation:

Note: To make this eggnog pancake recipe vegan, you need to use a vegan eggnog. You can find Silk brand soy eggnog in health food stores, or make your own with this vegan eggnog recipe.

In a large bowl, combine the flour, sugar, baking powder and salt. In a separate small bowl, combine the vegan eggnog, 2 tablespoons vegan margarine and egg replacer. Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix just until combined.

Heat a griddle or large skillet over medium heat and grease lightly with oil or vegan margarine. Pour batter onto griddle or skillet approximately 1/4 cup at a time. Cook until bubbles form, then flip, and cook until lightly golden browned on both sides.
