Breakfast Bread Pudding Recipe

Bread pudding with blueberries for breakfast

Bread pudding just for breakfast! This bread pudding recipe is baked with cinnamon, nutmeg and frozen fruit, but since it has less sugar than other recipes, this would be a great bread pudding for breakfast. Serve bread pudding for breakfast on Christmas morning. Recipe and photo courtesy of the Wheat Foods Council.

Ingredients:

  • 1/2 cup flour
  • 1 1/2 cups fat-free milk
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 6 eggs
  • 10 slices French bread, cut into cubes
  • 4 ounce low-fat cream cheese, cut into cubes
  • 1 cup frozen blueberries or strawberries, thawed
  • 1/2 cup water
  • 2 tbsp cornstarch
  • 1/4 cup powdered sugar
  • 3 tbsp butter or margarine, melted

Preparation:

Pre-heat oven to 400 degrees.

Combine flour, milk, sugar, vanilla, salt, cinnamon, nutmeg and eggs in a large bowl and beat with an electric or hand mixer until smooth. Add bread cubes and stir until coated.

Pour bread mixture into a greased 9 x 9-inch baking pan. Drop cream cheese cubes evenly over the top. Cover and refrigerate up to 24 hours.

Bake uncovered for 25 to 30 minutes or until golden brown.

Combine water, corn starch and sugar in a medium pan and cook over medium heat or in a microwave. Stir frequently until thickened. Add fruit and continue to heat until fruit is warm.

Drizzle each serving with melted butter and fruit topping. Sift powdered sugar lightly over top.

Makes 8 servings of breakfast bread pudding.

this recipe was good but i think next time i make it i will top it with apples and raisins instead of blueberries or strawberries.
