Four ways to eat polenta

Polenta is, at it's very core, cornmeal. That's it! But the possibilities of cooking with this basic vegetarian ingredient are endless. I'm of the opinion that polenta is an under-appreciated food. It's cheap, filling and is a staple food in many cultures. It's versatile in that it can be grilled, baked and pan-fried, and works for breakfast or for dinner. Oh, and it's vegetarian, vegan and gluten-free too, depending on how you prepare it of course. Here's a few fantastic ideas:

Pan-fried polenta This gourmet polenta recipe is so amazing, you may want to make a double batch. Just trust me on this one! You won't be able to wait until it cools to eat it, but taking the time to let it cool and then fry it up is absolutely worth the wait.
Basic breakfast polenta Here's how I like to eat a creamy quick homemade vegan polenta when I'm cooking it up for breakfast - topped with plenty of nutritional yeast, of course!
Mushroom and polenta "pizzas" Polenta pizza? Sure, why not! This pizza-inspired recipe uses polenta along with traditional pizza ingredients for a layered Italian pizza-like dish.
Grilled polenta Plain polenta takes on a delightfully crispy crunch when lightly grilled, while still staying soft on the inside. It's like a cornmeal marshmallow!
