Chocolate rum pie is a Southern vegan dessert made with chocolate, sugar, rum, tofu and a coconut topping. I must confess, I added a bit of extra rum when making this recipe, and I won't judge
you if you do the same. I used a dark Hawaiian rum, but any decent quality will do. You really can taste the rum, so be sure to use a rum that you enjoy drinking! I recommend making this vegan rum pie in advance and allowing the flavors to really develop for at least a couple of hours, preferably overnight. If you try this recipe with brandy or another spirit in place of the rum, let me know how it goes!
