Now that I've confessed my new-found love of vegetarian bacon, I thought I'd share one way to integrate veggie bacon into your breakfast: Make a vegan "bacon and eggs" tofu scramble! Turn your home kitchen into a greasy-spoon diner without the grease (but with all the nostalgia). This completely egg- and dairy-free recipe is made with store-bought bacon substitute, tofu, red bell peppers and scallions.
