When I used to work on the road promoting vegetarianism
, bean dip was always a favorite midnight snack for my fellow vegans and I, because it was something vegan we could find even in the middle of nowhere. We justified eating bean dip out of a can at 2 AM by telling ourselves it was healthier than eating chips or candy or whatever other munchies the 24 hour mini-marts in Nebraska stocked (incidentally, I've put together a list of travel tips for vegetarians
to make sure
this doesn't happen to you, and, since this is 2013, those same road stops probably stock arugula, vegan cookies and tofu dip nowadays). But I digress.
These days, I prefer to make my own homemade bean dip, and I recommend you avoid the sodium-laden canned stuff and make your own as well. It's quite easy, and even the laziest Super Bowl party host can pop open some beans and add some salsa and cheese. Here are eleven vegetarian bean dip recipes to choose from for your vegetarian or vegan Super Bowl party. Enjoy!
