I'm a firm believer that vegan pumpkin pie made with tofu (pictured) is healthy enough to eat for breakfast. And I have done so, on at least one occasion. It's relatively low in sugar and fat (when eaten in moderation!), since the main ingredients are tofu and pumpkin.
