
Trying new foods is one of the best parts of being vegetarian and vegan. Make it a game - every time you go to the grocery store, pick up one thing you've never tried before. Here's a few suggestions:

Used to eat Jerusalem artichokes regularly when I lived in the UK. The most common way to cook them is to scrub, slice as thin as you can be bothered and then either fry or toss in ail and roast. Scummy.
