To say this vegetarian Mexican posole soup is tasty would be an understatement. I served it up recently a group of aging beer-and-scotch-swilling punk rockers who happened to be visiting (it's a long story), and who could hardly wait for it to be finished before digging in. They polished it off with tortilla chips and beers, though they each asked me what "hominy" was. I added extra chili powder to give it even more of a kick, which the boys seemed to think went well with the beer. After the scotch started flowing, though, I didn't trust their opinion too much! A great soup and a great time was had by all.
