Most people think of pho when they think of Vietnamese cuisine, but I think of spicy salads, fresh spring rolls packed with flavorful herbs and of course, thick black Vietnamese coffee. Lemongrass, green limes, red chilies, fresh cilantro and shallots combine to create a colorful cuisine that while similar to Thai food, has it's own unique history.
