Most people think of pho when they think of Vietnamese cuisine, but I think of spicy salads, fresh spring rolls packed with flavorful herbs and of course, thick black Vietnamese coffee. Lemongrass, green limes, red chilies, fresh cilantro and shallots combine to create a colorful cuisine that while similar to Thai food, has it's own unique history. My first trip to Vietnam, I was surprised to learn that because of the influences of French colonization, baguettes and cheese also factor into Vietnamese cuisine.
