If you're like me, you're always looking for new ways to enjoy avocados, especially in the summer when they're fresh and the price dips a bit (no pun intended!). Here's a new idea: avocado quesadillas. These cheesy flour tortillas are filled with avocado slices, cheese and corn, and are dipped in an avocado-spike ranch dressing. They're not super healthy, but at least they have a bit of corn in them, and they'd be a great finger food for an after-school snack, if your kids are already headed back to school. Enjoy!
