I don't care if it's the middle of summer, this recipe is such an easy and delicious side dish casserole, that it's worth turning on the oven for! Summer squash, sliced tomatoes and onions and some fresh herbs are baked into a delightfully cheesy gratin. All you need to turn it into a full meal is another side of a rice or a cooked whole grain, such as quinoa and perhaps some sauteed tofu or baked tofu and a green side salad.
