If you've got a handful of vegetables, a bit of sauce and some tofu, you've got yourself a quick easy week night meal. Just about any stir-fry recipe will go well with rice, noodles, or any kind of whole grain, and, stir-fries can be very forgiving if you need to sub out a couple vegetables for what you've got on hand. Leftovers store well for lunch the next day. Try this simple tofu and bell pepper stir-fry in hoisin sauce. I added a bit of hot chili sauce to give this some kick. It was perfect.
