Everybody loves green bean casserole during the holidays, but this bean casserole bake has absolutely nothing in common with that traditional dish. This is more like a baked nacho recipe, with lots of beans for protein, and less cheese to keep it lower in fat than nachos. Hold the chilies, and kids will love it, and top it off with a vegan cheese substitute instead of cheddar to keep it dairy-free. If you're not a fan of hominy, use another bean, or perhaps canned corn instead. I was tempted to add some salsa and some spinach to this recipe, just because I had some on hand, but then again, it's perfect just the way it is. Link: Three-bean baked casserole
