Soba noodles are an Asian-style noodle made from buckwheat that are often served chilled. This recipe can go either way - served hot or cold, depending on your preference. The noodles are tossed in a simple Japanese-flavored dressing of miso, soy sauce, and rice wine vinegar and mixed with tomatoes and blanched broccoli.
