Simply Green Asparagus Soup

This is the best time of year to shop the local farmer's markets, isn't it? Summer's bounties are already here, and many spring favorites are still lingering. I've been enjoying bunches of fresh asparagus while I still can, but they're disappearing quickly! If you're lucky enough to still have fresh asparagus in your markets for another week or two, here's a great asparagus soup recipe to try. No need to add too many extra seasonings to this simple vegan asparagus soup; just let the fresh flavor of the asparagus shine though. Be sure not to overcook your asparagus, and, if you insist on adding a bit of extra flavor to this recipe, a dash of nutmeg or a small spoonful of nutritional yeast will do the trick. But plain salt and pepper will be best.
