I stocked up recently on lots of Indian spices, so I've been stirring up a tornado of various curries and masala spiced munchies lately. Indian food recipes often have a long list of ingredients, but these are mostly spices to get the depth of flavor. Particularly with vegetarian dishes, Indian food is all about the spices! This potato, pineapple and coconut curry recipe tastes like its been simmering for hours, but its just the abundance of the spices and the rich coconut milk. I added a splash of fresh cilantro, just because I happened to have some on hand, but this curry is perfect just as it is too. Recipe: Potato Curry with Pineapple and Coconut Milk

Indian food does require a lot of spices, but once you have your spice base established, the good news is that the spices can be used in also other foods like eastern Asian and even Latin if you’re creative.
