The secret to a perfect soy latte?

By , About.com GuideFebruary 15, 2009

Follow me on:

The problem with soy coffee drinks is that the soy doesn't get quite as foamy as dairy milk. I'm not a barista, but I've been told the secret to getting a nice foamy soy latte is getting the soy milk extra hot before steaming it. Or, apparently, using a specially formulated soy milk!

This morning, I headed to the grocery store to pick up a few things and noticed something new on the shelves. Apparently, Silk (one of the more popular soymilk brands) makes a special kind of soymilk specifically for making foamy soy lattes and coffee drinks! A little internet reseach shows that this is not a new thing, but its certainly news to me, so I wonder how many others don't know about this little soy secret?

So, if you're a dairy-free at-home amateur barista or connoisseur of cafe culture, keep an eye out for Silk's "CoffeeHouse Blend" in the dark blue packaging for the perfect soy latte.

Problem with Silk is the additive carageenan (carcinogen) and recently they have changed from organic soy to GMO and calling it Natural. I would avoid this brand entirely and Eden brand is the better choice at this point.

” Carrageenans or carrageenins (pronounced /ˌkærəˈɡiːnənz/, kar-uh-gee-nuhn or kar-uh-ghee-nuhn) are a family of linear sulfated polysaccharides that are extracted from red seaweeds. There are several varieties of carrageen used in cooking and baking. Kappa-carrageenan is used mostly in breading and batter due to its gelling nature. Lambda carrageenan is a non gelling variety that assists in binding, retaining moisture and in contributing to viscosity in sweet doughs. Iota carrageenan is used primarily in fruit applications and requires calcium ions to develop a heat-reversible and flexible gel.[1]
Gelatinous extracts of the Chondrus crispus seaweed have been used as food additives for hundreds of years.[2] Carrageenan is a vegetarian and vegan alternative to gelatin. “

There is no mention of carageenan being a carcinogen in the whole article in wikipedia. Where did you get your information, Lori? Oo

Not sure where Lori got her information from but I have read the following article:
http://blog.healthkismet.com/carrageenan-cancer-health-inflammation

It talks about a connection with colo-rectal cancer. Making your own soy and almond milk is so easy and gives you control over every ingredient. You can make sure you are not using GMO beans or nuts and you don’t even need the expensive machine. Just a blender and a sieve does the trick.
