Leftover Pumpkin and Pumpkin Hummus Recipe

I'm a multi-tasker. I like to do five things at once. So, this afternoon, I was just getting about to post my seasonal leftover pumpkin and canned pumpkin recipes, while also reading a few of my favorite vegetarian blogs (and sipping a latte and text messaging a friend - but that part is irrelevant), and I came across an ingeniously creative way to use any leftover pumpkin you might have from Halloween. My friend Sangeeta, who writes the ChooseVegBlog has been a busy bee in her kitchen, and came up with this beautiful recipe for pumpkin hummus using fresh pumpkin!
