More Summer Favorites: Potato Salad

Potato salad is one of those foods that seems to be universally American. Whether you grew up in Florida or Hawaii, you probably ate some variation of potato salad as a kid! Whether you serve it hot or cold, with or without eggs and mayonnaise, a potato salad is a traditional side dish to serve at your barbecue, picnic or just for an everyday lunch. Here are a few vegetarian potato salad recipes to try:

Dijon Potato Salad with Vegetarian Bacon Bits A creamy and crunchy potato salad recipe with sliced black olives and Dijon mustard.
No-Mayo Potato Salad with Green Peas (pictured) This easy mayonnaise-free vegan potato salad recipe is great for a picnic, since you don't have to worry about refrigeration. It's also got a healthy dash of green veggies.
