Riveting Vegetarian Risottos

I used to think risotto was one of those "fancy" foods that only I could only ever eat in a restaurant. Anything that rich and creamy and with a fancy name must be difficult to make, I thought, until I tried making it myself and realized just how easy it is. Try some of these easy vegetarian risotto recipes, and have fun experimenting by adding different types of cheeses, or your favorite vegetables. For an extra touch, lightly roast some bell peppers, stuff with risotto and garnish with extra Parmesan cheese.
