Video Recipe: Chilled Beet Soup

Although Polish beet soup, also called borscht, is usually served chilled, this vegetarian recipe is delicious hot or cold. Made with fresh beets and vegetables and flavored with fresh herbs, this recipe is also quite low in fat as well as calories. For a vegan version, simply omit the eggs.

the local farmers market always has the nicest looking beets but I usually just roast them. I stopped buying them until I had a new idea on how to use them- this will work just fine… except for the fact that I need to wait the WHOLE WEEK to get some more beets hehe
