Vegetarian and Vegan Kugel Recipes for Chanukah

Traditional kugels usually have eggs to bind the ingredients together to form a casserole-like dish. Vegans can use an egg substitute, such as Ener-G Egg Replacer to make a tasty vegan kugel perfect for your Chanukah table. If you've got a food processor to help you grate the carrots and potatoes, then you can get this vegan carrot and potato kugel baking in no time at all. Or, try this low-fat vegan sweet kugel with sweet potatoes, matzo, cinnamon and raisins. Yum!
