Beyond Pumpkin Pie

Pumpkins seem to be everywhere these days, flooding stores in preparation for the upcoming holidays. But pumpkins can be so much more than pies and Halloween decor! As a naturally low fat, low calorie food, they are also rich in vitamin C and beta carotene. Try some of these fall recipes and add a splash of vibrant orange color to your vegetarian Thanksgiving or Halloween table and your diet.
