In the News: Go Vegetarian to Save Money

Saving money on your life insurance isn't the only way going veg can be good for your pocketbook. MSN Money reports that a healthy veg diet, along with being cheap, will help you save on your health care costs years down the road. I'm not too sure about the rest of the world, but in the United States, the cost of health care can be absolutely crippling. Even though, as the article points out, you can't put a price on good health, you can save yourself $60,000 on a future bypass surgery by going vegetarian now!

I do feel inclined to point out, however, that just because a meal is vegetarian or even vegan, that alone doesn't make it nutritious. So be sure that you're making sensible choices when eating a vegetarian or even a mostly vegetarian diet in order to reap the future health benefits and savings.

If you're looking to save money now, the article also points out that rice, corn and beans - all vegetarian and vegan staples - are some of the cheapest foods available and much cheaper per pound than almost all meats. So, in homage to yet another reason to embrace a vegetarian diet, here are some of my super-cheap and super-yummy recipes featuring rice, corn and beans, along with every college student's favorite delicacy: ramen noodles.

Starch from rice, beans and ramen are not healthy solutions or staples of the vegetarian or vegan lifestyle. It is the cheapest food available, but you pay later with your health.

Why don’t the vegetarian recipes have nutritional breakdowns? I’m on a low fat diet and would definitely like to try some of your recipes!

Great article! I think insurance companies should give vegetarians a break because of our healthy eating habits. Let the people who eat meat (and choose to make themselves sick) pay the higher premiums. Many people have argued that they cannot afford to eat healthy…You can’t afford NOT to!
