A Plethora of Pestos

Pesto! It can be tossed on pasta, used as a dip or spread for hors' d oeuvres or spread on dough for a pesto pizza. Read on for some basic and unique pesto recipes. For a healthier and lower-fat pesto, I sometimes substitute about half of the olive oil for some soy milk, though I can hear all the traditional Italian chefs groaning when I say that! Another idea to make your pesto even healthier is to substitute half of the basil for some fresh spinach leaves. The flavor won't be quite as strong, but you'll hardly notice, since the spinach will look just like the basil. Never made pesto before?
