Bob Barker's vegan Enchilada Baked Casserole recipe

If you've ever seen "The Price is Right" you know that Bob Barker, a devoted animal-lover (and vegetarian!), always ended by urging viewers to spay and neuter their pets. Now, the retiring game show host has shared with Esquire magazine one of his favorite vegan recipes - a baked vegan enchilada casserole. I haven't tried it out yet, but it looks absolutely delicious!
