Ten-Minute Vegetarian Taco Filling Recipe

Friday September 8, 2006
This recipe uses store-bought salsa and taco seasoning to make a super-quick vegetarian taco filling from TVP. You can whip up this recipe in just a few minutes. The TVP has a texture and appearance similar to shredded chicken when cooked, and, when sauteed with taco seasonings, tastes similar to the real thing! Wrap in a flour tortilla or stuff in a hard shell with lettuce, tomatoes and beans.

TVP (textured vegetable protein) is a high-protein and low-cost vegetarian staple that will keep in the pantry, so I like to stock up and keep some on hand. Look for TVP (sometimes called TSP) in the bulk bins or baking section of your local health food store.
