Quick Dinner: Vegan Pesto Pasta

If you've got a food processor, some fresh basil and a few other basic ingredients, you can have a simple yet elegant meal of vegan pesto pasta on the table in about fifteen minutes. This pesto recipe, minus the anchovies and cheese in traditional recipes, tastes surprisingly like the real thing and chances are no one will even suspect that its vegan. I like to toss in a handful of spinach and a few extra herbs sometimes for an added nutritional and flavor boost. If you're not a pasta fan, you can also use this pesto recipe as a spread for crackers or sandwiches, or, use it instead of tomato sauce on pizza.
