Quinoa salad is surprisingly tasty and healthy! Its fairly quick to make and can easily serve a large group of people and keeps well, so its a great dish to share at a vegan potluck or picnic.

Whole grain quinoa cooks quicker than most other whole grains and is an excellent source of protein for vegetarians with about 11 grams of protein per cup of cooked quinoa. Feel free to experiment by adding different veggies such as zucchini, corn or even kale or spinach greens. Not sure what quinoa is or how to use it? See What is quinoa?

Quinoa are tiny little grains so it serves heaps. easily serves 10 ppl using two cups.. mix it up with red quinoa.. this stuff is amazingly good for you, i used it to make bircher muesli.
