Avocado fudge? Avocado fudge!

Monday April 17, 2006
The usually sleepy hillside town of Fallbrook, California, is gearing up for its annual avocado festival this weekend! Known as the "Avocado Capital of the World", Fallbrook sells a variety of avocado products year round including rich, decadent and tasty (I promise!) avocado fudge.

On my last visit to Fallbrook, I didn't purchase nearly enough fudge to satisfy my tastebuds until next time, so I've come up with my own recipe for avocado fudge. It may seem a bit strange at first, but the avocado serves as a creamy base for this dairy-free confection, and although you can't really taste the avocado at all, its a great conversation starter and a fabulous "secret" ingredient.

We also first tried this fudge in Fallbrook. We go there several times a year for “events.” We just loved it, and I have been wanting a recipe for Avacado Fudge ever since. Thank you so much! Delicious!!!! Connie and Dusty

I used this recipe (although I replaced the walnuts with pistachios) at the recent avocado food & wine festival in Katikati, NZ. The fudge went down a treat and disappeared in seconds with plenty of requests for the recipe!! Unfortunately I hadn’t made enough to last the whole day.
